Baltic Sprat is a popular seafood, which is also called European Sprat (lat. sprattus).

Sprat belongs to the clupeidae. This is a smaller variant of herring, palm-length, not more than 15 cm. It lives in big groups in the cold seas. Baltic sprat catch in commercial goals takes place off-shore the Gulf-of-Finland, the Baltic sea. In summer Baltic Sprat stock migrates into the deep waters, so catch takes place from the end of autumn season, when sprat flesh contains maximum of useful elements and features the saturated taste.

Flesh texture of Baltic Sprat is resilient and slightly firm. The flesh can be easily separated from bone. 100 gr of raw fish contain 62% water.

Sprats are considered extremely useful for people with heart disorders due to the high content of fatty acids.

However, the useful parts in sprat are not only fillet, but such parts which are not usually consumed as food: scales, backbone, bones and tail. They are rich in calcium and phosphorous. Sprats are also recommended for people who need additional intake of vitamin D.

Use of Baltic Sprat in culinary

Sprat is commonly used and there are numerous recipes with sprat. Most popular are canned sprats, and preserves from freshly-caught and marinated raw fish.
